When I discovered my little babe had some food allergies,
I started looking into some alternative cooking styles.
We didn’t know exactly what he was allergic to,
but I figured he was probably sensitive to dairy and/or gluten.
Turns out, he may not be, but I have found some really neat new recipes.
While shopping at Costco I saw that they had a bag of organic coconut flour.
I bought it and started researching for some great recipes.
I have a weakness for cookies, so when i saw this recipe, I knew I had to try it.
{don’t try to substitute coconut flour for regular flour… it is much more absorbent}
Something that I have discovered when trying to make healthier, dairy or gluten free foods,
is that many of the ingredients I don’t have yet.
I think I will eventually venture into these things, but for now
I altered the above recipe slightly to include the dairy products.
{If you are dairy intolerant though there are substitutes you can use.}
These cookies are pretty delicious.
My three year old LOVED them.
I found that they are even better with a glass of milk too.
They are soft. And coconutty. And chocolatey.

Ingredients
- ⅔ cup coconut flour (2¾oz)
- ⅓ cup corn starch (1¼oz)
- ½ teaspoon baking powder
- ¼ teaspoon baking soda
- ⅓ cup sugar
- 1 teaspoon vanilla extract
- 2 whole eggs
- ⅓ cup chocolate chips
- 4 tablespoons coconut oil, liquid
- 4 tablespoons butter, softened
- 2-3 tablespoons water
Instructions
- Have all ingredients out to room temperature.
- Pre-heat oven to 350 degrees.
- In a large bowl, place all your dry ingredients. Stir.
- Add in your chocolate chips and stir.
- Next add in your softened butter, vanilla, coconut oil and eggs, let sit for 10 minutes.
- Stir.
- End with adding in your water. Till you get the batter to start holding together. You want it to be on the thick side.
- Scoop onto cookie sheets.
- Push cookies down and shape them however you’d like… they won’t spread on their own.
- I got about 16 cookies, all depends on your size of scooper.
- Bake for 14-16 minutes.
- Cool before removing from cookie sheets.

YUM! I was told that my toddler had a lot of allergies but he either grew out of them or they were not allergies (I'm convinced it was the pacifier causing the trouble).
